I finally found a pattern! www.darnknitanyway.com "Darn Knit Quick and Bulky Mittens"
Pattern uses super bulky yarn and 4 size 6.0 mm dpns. Dpns are double-pointed needles for anyone who doesn't know.
Now this pattern called for a super bulky yarn, and I didn't have any on hand so I just doubled up my bulky yarn and it worked fine. I also used a size 5.5mm dpns for this project as I seem to knit a little loose and usually have to go down one or two needle sizes for most projects. Pain in the ass because that means I usually have to make a swatch and guage my work, which I hate doing, but I hate having to pull out entire projects because they are too big!
The mitts actually knitted up really quick!
The only problem I had was with the very last instruction of the mitten. It said to bind off the stitches using the 'Kitchener stitch'. I tried! I really did, but after six stitches it just looked like a hot mess, so I un-knitted them and just weaved my yarn through my live stitches, pulled together and tied off my yarn. You can't even tell! The mitt looks perfectly fine.
Here is the final product and the top of the mitt looks right so I think it should be fine to change this project a little and get the right results.
The thumb gusset was actually easier than I thought. I learned, via YouTube how to pick up stitches around the thumb gusset and then I just knit 8 rows!
Here's the thumb as I'm knitting it. Everything turned out ok with the thumb as well. The only thing is that after you're finished there will be some holes from where you picked up stitches, so the pattern just told me to weave in over the holes and now you can't even see them, or the one stitch I did wrong that ended up with a hole for some reason! There's always something that goes wrong!

Also, these mittens aren't really warm enough for outside walking in a Canadian winter, but if you are just going out to dinner or driving your car they will work fine. I am planning on lining mine if it doesn't seem too hard. I've never lined anything before!!!
